Hot & Spicy Mexican Beans

A delicious & spicy side dish of Mexican Beans. Easily preserved and stored in jars.
Ingredients
500 grams White Beans, soaked overnight
1 Onion, chopped
2 cloves Garlic, crushed
80ml Quinns White Vinegar
375ml Water
5ml Cayenne Pepper
3ml Ground Cinnamon
3ml Turmeric
3ml Salt & Pepper
Directions
- Drain and rinse the soaked beans.
- Simmer in a large pot covered with water for 45 minutes until almost tender. Drain well.
- Preheat over to 180°C.
- Place beans and remaining ingredients in a large roasting pan.
- Mix well and season.
- Cover with foil and bake for 30-40 minutes, until beans are tender.
- Spoon into sterilised jars and seal tightly.
